Top 5 Favorite & Easy Dinner Recipes

I don’t know about y’all but we’re tired of cooking & we’re running out of dinner ideas. We’ve been cooking the same amount that we always do but quarantine has made it feel like so. much. more. So if you’re anything like us & need new dinner inspiration, look no further!

In my house, we all have nights to cook dinner. My nights are Tuesday & Thursday and on my nights you don’t always know what you’re gonna get.

I love to cook and try new recipes but I also love quick & comforting meals that we’re familiar with. I try to challenge myself and make new recipes while still balancing family favorites & also honoring the nights/weeks where I just do. not. want. to. cook.

I thought I would create a round-up post with my 5 current favorite & easy dinner recipes. These recipes are repeats in my house on my nights so without further ado…

5 Favorite & Easy Dinner Recipes

  1. Sesame Chicken by Budget Bytes: I made this for the first time a few months ago & I make this one often. It’s quick, easy & even more importantly in my house: EVERYONE likes it! YAY! It serves enough for all four of us without leftovers though my family loves it so much that they’ve asked me to double the recipe. It’s that good! The chicken is crispy & sauce isn’t thin but isn’t super thick either (depends on how long you cook the sauce, honestly). We pair it with white rice & steamed broccoli.

2. Light Creamy Chicken Noodle Soup By Sally’s Baking Addiction: Funny story….the first time I made this, I just eyeballed the amount of chicken and noodles & let’s just say that I did not make soup that night. I made a casserole. I’m laughing just thinking about it. The next time I made it using the exact amount of ingredients, it was more soup-like but still thick. I had to add more broth when I ate leftovers. The third time was a charm, friends! I upped the amount of broth by 1 (14.5oz) can of broth. If you make this & notice that it’s thick, add more broth. While I had the right consistency for soup & made the dish Sally intended, I realized I prefer it a little thicker (my 2nd try) but of course, half of my house preferred it (finally) being soup. Either way, it’s a family favorite.

3. Buffalo Ranch Chicken Sliders: This one is obviously a fav because I even made it my own & gave it it’s own blog post. You can make portions of this dish ahead of time & it seriously takes 35 minutes to make & you spend 20-25 of those minutes baking it. Put some fries, tater tots, or chips on the side & you’re good to go! Leftovers are even better!

4. Turkey Burgers: I started making turkey burgers about two years ago & we’ve never looked back. They instantly became a favorite. And they’re SUPER easy. For a while we actually liked them better than beef burgers. I get the 93% lean turkey so it has some fat. I’ll put my recipe for turkey burgers at the bottom of this post. We pair them with fries or chips or coleslaw or salad. They go with anything.

5. Cacio e Pepe by Jessica Seinfeld: I really don’t think it gets easier than this pasta dish. Here’s what you do: combine butter, cheese, & pepper. Cook pasta. Combine. Eat. The most difficult part is grating the cheese but that could just be because I really don’t like to grate cheese. Pair this with a salad & you’re good to go. It’s the perfect meatless dish. I found this recipe in her cookbook, Can’t Cook Cookbook, but this version online is almost identical. The only difference is that the cookbook version calls for a ½ cup of Parmesan & I personally think that a ½ cup is enough but if you like things realllly cheesy, then make it a full cup like the recipe linked here.

Turkey Burgers are one of my 5 favorite & easy dinners

Turkey Burgers

Quick & easy, these turkey burgers are a go-to in my house!

Ingredients
  

  • 1 lb ground turkey (I use 93% lean, 7% fat)
  • 1/4 cup plain breadcrumbs OR a slice of bread torn up into small pieces
  • 1 tbsp + a splash of Worcestershire sauce
  • 1 tsp black pepper

Instructions
 

  • Combine all ingredients in a large bowl.
  • Portion out into 3-4 patties depending on how big/thick you want them. (I usually just make 3.)
  • Grill for about 6-7 minutes per side. Enjoy!

Notes

You can also sauté the burgers but it will take longer to cook. 🙂
